Emma's Galaxy Chocolate Pancakes

Pancakes, who doesn't like a good pancake? Personally I love them, I think they're worth getting all hot and bothered in the kitchen for, as the end result is so yummy. Like every year, my family and I will be having pancakes for pudding on shrove Tuesday. Even at 23 I'm pretty excited about it still!
I thought I would share with you a  recipe of mine that has a twist on a traditional pancake. This recipe is pretty easy and a great way to impress family and friends. Plus I think it tastes pretty damn good, even if I do say so myself!

Galaxy pancake recipe:

What you will need:

2 extra large eggs
100g plain flour
15g coco powder
1 tsp baking powder
140 ml skimmed or whole milk
1 tsp Orange Marmalade
100g galaxy chocolate
Pinch of sea salt
A heated frying pan
A little oil
Electric or hand whisk


For the chocolate orange sause:
Melt 40g galaxy, add a little milk until you get a sause like consistency, add a teaspoon of marmalade, mix well. You can leave the marmalade out if you don't like chocolate orange. Put to one side.

For the pancakes:
Separate the eggs, keeping the whites to one side. To the egg yolks add the flour, coco, baking powder and milk, mix this until you have a smooth thick batter. Then mix in 50g chopped chocolate.

Now whisk the egg whites with the pinch of salt, until they form stiff peaks. 

Carefully mix in the egg whites into the batter, making sure that you don't over mix.

In a preheated pan add a little oil and a tablespoon of mix. I managed to get three pancakes in my pan at a time. Allow the bottom to cook before flipping over to cook the other side.

Repeat until you are out of batter, pile up on a plate, add the chocolate sause, cut up the left over chocolate and sprinkle the shavings and zest of an orange on top. If you don't fancy orange just like the sause,  leave it out. Lastly dig in!
